You did it. You’ve arrived here in 2021 in one piece, torn the final page off of your calendar, and counted down the moments until midnight. You made it to the other side.

2020 wasn’t our favorite year (by a long shot), and we’re surely going to spend the next month or so celebrating that it’s in our rearview mirror. As we look toward the future, here are the four cocktails that we’ll be drinking to celebrate getting through 2020.

Blood Orange Champagne Mule

Every celebration needs a little champagne, don’t you agree? This blood orange champagne mule is the zesty, yet bubbly beverage you need to embrace positivity and genuinely look forward to the year ahead. It has a bright, optimistic orange tone, and, when you garnish with a slice of blood orange and a bit of mint on top, you’ll end up with a sophisticated cocktail that tastes as good as it looks. Plus, who can keep from smiling when a champagne bottle is popped?

Spiced Pear Bellini

For something with a bit more depth, we’re going for this spiced pear bellini. Its prosecco base keeps things light and fresh, while cinnamon and cardamom give this drink a seasonal twist. We love that there aren’t many ingredients for this drink, and that it’s just as at home in an ornate glass at a gathering as it is in your go-to wine goblet for a cozy night in. However you’re celebrating the end of 2020, this cocktail fits the bill.

Pomegranate French 75

Pomegranate is another favorite winter flavor of ours. This juicy deep red fruit makes the prettiest drinks, and we’ll find just about any excuse to incorporate it into our pitcher. A traditional French 75 uses champagne, gin, lemon, and simple syrup, but this version brings the fruity punch. The pomegranate plays so well off of the herbal element of the gin, and the bubbles from the champagne add a bit of celebratory flair to this classic beverage. Cheers!

Honey Bourbon Cocktail with Rosemary Simple Syrup

Finally, we’re reaching for the dark liquor with this cocktail. If your celebration is more of the “cozy up by the fire with a book” type, you’ll want to try this one! The honey and bourbon together could make this drink heavy or one note, but the rosemary simple syrup cuts through the smokiness with an earthy bite. The flavor profiles here are luxurious, a bit more dense than the recipes above, but well worth it if you’re prone to sipping on a drink and appreciating every flavorful nuance.
